Early Summer Shrub

This is going to be a good one, I just know it.

Strawberry, gooseberries, elderflowers, lemon slices combine with local honey and organic apple cider vinegar to create a tasty shrub. Infusing for 2 weeks then straining and enjoying with sparkling water and maybe a cocktail with a bit of St. Germains.

Harvesting gooseberries, yarrow, and lavender

Harvesting gooseberries from the garden. These are the easiest berries to grow, the shrubs grow quickly and you aren’t always fighting the birds for the berries due to the small thorns that also grow on the bush. If you want easy care berries, these are my top choice! The shrubs are also easy to propogate and I plan on adding more for next year.

I only harvest a small amount of elderflowers because I want what comes after the flowers, the berries! But I do enjoy picking just enough for my own needs and making a few treats with the flowers
